Sweet Potatoe, Black Bean, and Kale Quesadilla

Fun and simple is what I like to think about this dish. This is a great dish for sitting around the house watching the game. Make sure that you make extras so that you can pack a few into the children's lunch. Oh yeah! this is great meal to combine with the Avocado Hummus... (see previous post)


Sweet Potatoe, Black Bean, & Kale Quesadilla

3 sweet potatoes
2 cans Organic Black Beans
1 pack Whole Wheat Tortillas
2 bushels Organic Kale
1 can of chipotle peppers in adobe sauce
1 bag vegan cheese (I use Daiya Cheddar)


Directions:
  1. Cook sweet potaotes until tender (drain water)
  2. Begin to mash sweet potatoes with masher until smooth
  3. Add 3 adobe chilies and begin to mash until peppers are blended well
  4. Add black beans and kale (don't worry kale will cook in sweet potatoe mixture)
  5. Add mixture to tortillas with vegan cheese and serve
*for an added bonus place quesadilla in skillet with Earth Balance vegan spread and cook until lightly toasted

Vegan Seitan Stir-Fry



Vegan Seitan Stir-Fry
1lb basic homemade seitan
2 heads of broccoli
2 bags organic carrots
4 stalk of celery
1 large white onion
Ginger
Garlic
1 pack thin rice noodles
1 lime
2 cups of San-J Szechuan Sauce


Directions
  1. Let sesame oil get hot, then saute ginger and garlic until fragrant (3-5min.)
  2. Add desired vegetables and let cook until desired texture (stirring occasionally)
  3. Add rice noodles to vegetables
  4. Add San-J Szechuan Sauce, let cook for 10min. (stirring occasionally)
  5. Let cook for extra 10min. plate and serve with a side of lime
*for a nice balance squeeze lime juice in top...

This is a very quick and easy recipe that I put together after a few inspiring Internet searches. Most of your time will be spent on preparing your vegetables, but in the end it is well worth it. Enjoy...

Avocado Hummus

This hummus recipe is one that I picked up from my daily Pinterest search. There are many different variations to this great dip! My rule of thumb is to try them all until you find the best one. Although, I will say that you can't go wrong with this recipe! I've had many types of hummus (mostly store bought) this was my first try at making it from scratch. The reviews that I have received from vegans and non-vegans about this recipe has been overwhelming. This basically meaning that I need to post the recipe for other's to enjoy. The original recipe yields about 4 to 6 servings. My recipe will be for double the original portion size. Peace...

Avocado Hummus
2 15oz cans of cannellini beans, rinsed and drained
4 medium avocados
1.5 cups of arugula (packed)
4 tablespoons of fresh lemon juice
3 garlic cloves
Kosher Sea Salt (to taste)
Ground Black Pepper (to taste)
4 tablespoons EVOO
2 pinches of cayenne pepper

*You can use a blender or food processor for this recipe, just make sure that you blend well. The consistency should be thick and creamy...
