Sweet Potatoe, Black Bean, & Kale Quesadilla
3 sweet potatoes
2 cans Organic Black Beans
1 pack Whole Wheat Tortillas
2 bushels Organic Kale
1 can of chipotle peppers in adobe sauce
1 bag vegan cheese (I use Daiya Cheddar)
Directions:
- Cook sweet potaotes until tender (drain water)
- Begin to mash sweet potatoes with masher until smooth
- Add 3 adobe chilies and begin to mash until peppers are blended well
- Add black beans and kale (don't worry kale will cook in sweet potatoe mixture)
- Add mixture to tortillas with vegan cheese and serve
